In a medium bowl, combine the skinless boneless chicken thighs, Greek yogurt, tandoori masala, chilli powder, and salt. Mix thoroughly to ensure the chicken is well coated with the spices.

Preheat your air fryer to 200 degrees Celsius. Place the marinated chicken thighs in the air fryer basket and cook for 15 minutes, or until cooked through and slightly charred.

While the chicken is cooking, prepare the mint mayo. In a blender, combine the boiled eggs, boiled egg whites, mint chutney, salt, the juice from half a lime, and 50 ml of water. Blend until the mixture is completely smooth. If the mayo is too thick, add a little more water, 1 tablespoon at a time, until desired consistency is reached.

Once the tandoori chicken is cooked, remove it from the air fryer. Using a fork or your hands, shred the chicken into bite-sized pieces.

Add 2 to 3 tablespoons of the prepared mint mayo to the shredded tandoori chicken. Mix well to coat all the chicken pieces evenly.

Take your chosen bread slices. Spread a layer of the remaining mint mayo on one side of each slice.

Spoon the tandoori chicken mixture onto one slice of bread. Garnish with fresh coriander.

Place the other slice of bread on top to form a sandwich. Toast the sandwich on both sides in a pan, toaster, or sandwich maker until golden brown and heated through.

Serve immediately. Any remaining mint mayo can be used as a delicious dipping sauce.
