Prepare all ingredients: Peel and slice the ginger. Chop the onion. Cut the onion leeks into 2-inch segments. Slice the apple into wedges. Roughly chop the Napa cabbage or Baguio Pechay. Have the whole chicken and goji berries ready.

Layer the ingredients in a heavy-bottomed pot with a tight-fitting lid (such as a red cast iron pot). Start by placing the sliced apple and chopped onion at the bottom of the pot.

Spread the roughly chopped Napa cabbage or Baguio Pechay over the apple and onion layer.

Add the sliced ginger and chopped onion leeks over the cabbage layer.

Sprinkle 1 tablespoon of the goji berries over the layered vegetables.

Carefully place the whole chicken on top of all the layered ingredients.

Place the remaining 1 tablespoon of goji berries and a few extra ginger slices directly on the chicken. Season the chicken generously with salt.

If desired, add 1 cup of water or broth to the pot to help prevent the bottom ingredients from burning. This is optional, as the ingredients will release their own liquids during cooking.

Cover the pot with its lid and cook on low heat for 1 hour and 30 minutes. Do not lift the lid during cooking to retain all the moisture and essence.

Once cooked, the chicken should be very tender and easily come apart. Serve the clean, comforting, and richly flavored soup with the cooked chicken and vegetables, often over rice.
