Cut the pork belly into even, bite-sized pieces.

Place the cut pork belly into a pot with cold water.

Add 2 scallions, half of the sliced ginger, and the cooking wine to the pot.

Bring the water to a boil over high heat.

Skim off any foam that rises to the surface.

Cook the pork belly in the boiling water until it is about 80% cooked through, which should take about 10-15 minutes.

Remove the pork belly from the pot and transfer it to the inner pot of a rice cooker.

Add the remaining fresh scallion, the rest of the sliced ginger, the cinnamon stick, star anise, bay leaves, dried chili peppers, and the rock sugar cubes to the rice cooker with the pork belly.

Season the pork belly by adding the salt, light soy sauce, oyster sauce, dark soy sauce, and soybean paste to the rice cooker.

Pour the can of beer over all the ingredients in the rice cooker.

Stir all the ingredients well to combine them thoroughly.

Close the lid of the rice cooker.

Press the "cook" button on the rice cooker to start the braising process. Allow the rice cooker to complete its full cooking cycle, which typically takes 40-50 minutes depending on the model.

Once the cooking cycle is complete, carefully open the lid.

Garnish the braised pork belly with chopped scallions before serving.
