Lay one nori sheet flat on a clean cutting board or work surface with the rough side facing up.

Prepare the rice paper: Briefly dip each rice paper sheet in warm water for 10-15 seconds until pliable. Overlap the two moistened rice paper sheets slightly and place them on top of the nori sheet, centered.

Place the romaine lettuce leaf horizontally across the center of the rice paper.

Layer the shredded carrots on top of the lettuce leaf.

Add the shredded cabbage next to the carrots, creating an even layer.

Arrange the sliced tomatoes on top of the cabbage.

Place the two baked chicken strips on top of the layered vegetables.

Add the sliced avocado on top of the chicken strips.

Generously drizzle the spicy mayonnaise (or chosen sauce) over all the assembled ingredients.

Carefully begin rolling the ingredients tightly from one end. Use your fingers to tuck in the fillings and ensure a compact roll. Start by folding the rice paper over the fillings, then continue to roll, pulling the nori sheet over the rice paper and fillings to create a firm, tight roll.

Once the roll is complete, sprinkle sesame seeds onto the exterior of the nori, gently pressing them to adhere.
