Preheat your oven to 375°F. Lightly grease a standard 12-cup muffin tin.

In a large mixing bowl, combine the ground beef, ground pork, egg, bread crumbs, milk, dried onion flakes, garlic powder, salt, and black pepper. Mix gently with your hands until just combined. Be careful not to overmix, as this can lead to tough meatloaf.

Divide the meat mixture evenly among the 12 prepared muffin cups, gently pressing it down to form compact muffins.

Bake the meatloaf muffins for 15 minutes.

While the muffins are baking, prepare the barbecue glaze. In a small bowl, whisk together the barbecue sauce, light brown sugar, and apple cider vinegar until well combined.

Remove the muffin tin from the oven. Spoon about 1 tablespoon of the prepared glaze over the top of each partially baked meatloaf muffin. Then, evenly sprinkle the crumbled bacon and shredded sharp cheddar cheese over each muffin.

Return the muffin tin to the oven and continue to bake for another 10-12 minutes, or until the cheese is melted and bubbly, and the internal temperature of the meatloaf reaches 160°F.

Once baked, remove the muffin tin from the oven and let the meatloaf muffins rest in the tin for 5 minutes before carefully removing them. This allows them to set and makes them easier to transfer.
