Preheat your oven to 380°F (190°C). Line a large sheet pan with parchment paper.

In a small bowl, combine all ingredients for the fajita seasoning mix: salt, garlic powder, dried oregano, smoked paprika, cumin, chili powder, and coriander powder. Mix well.

Place the diced chicken thighs in a large bowl. Add 2 tablespoons of the prepared fajita seasoning mix, 2 tablespoons of olive oil, and the juice of one lime. Mix thoroughly by hand until the chicken is well coated.

Spread the diced red onion, white onion, red bell pepper, yellow bell pepper, and green bell pepper evenly on the prepared sheet pan. Sprinkle the vegetables with another 1 tablespoon of the fajita seasoning mix and spray generously with olive oil spray. Toss to coat evenly.

Roast the seasoned vegetables in the preheated oven for 20 minutes.

After 20 minutes, remove the sheet pan from the oven. Increase the oven temperature to 400°F (200°C).

Spread the seasoned raw chicken evenly over the partially cooked vegetables on the same sheet pan. Lightly spray the chicken with olive oil spray.

Return the sheet pan to the oven and bake for another 25-30 minutes, or until the chicken is cooked through, crispy, and golden brown. The internal temperature of the chicken should reach 165°F (74°C).

Remove the sheet pan from the oven. Add 1 cup of low-fat shredded cheddar cheese, 1 cup of low-fat shredded mozzarella cheese, half of the diced fresh tomatoes, and half of the chopped fresh cilantro to the hot chicken and vegetables. Mix thoroughly with a wooden spoon until the cheese is melted and all ingredients are well combined.

Sprinkle the remaining 1/2 cup of cheddar cheese, 1/2 cup of mozzarella cheese, the remaining diced tomatoes, and chopped cilantro over the top of the mixture on the sheet pan.

Set your oven to broil. Broil the sheet pan for 2-3 minutes, watching carefully, until the cheese is bubbly and slightly crispy.

Serve the hot, cheesy chicken fajita mixture generously onto low-carb tortilla wraps. Top with your favorite spicy sauce and roll up to enjoy.
