Preheat your oven to 180°C (350°F). Lightly grease a medium baking dish (approximately 20x20 cm or 8x8 inches).

To make the cheesy sauce, melt the butter in a medium saucepan over medium heat. Once melted, add the plain flour and whisk continuously for 1-2 minutes to form a smooth roux.

Gradually pour the warm milk into the roux, whisking constantly to prevent lumps. Continue to whisk until the sauce thickens and becomes smooth, about 3-5 minutes.

Remove the saucepan from the heat. Add 150 grams of shredded cheese to the white sauce and stir until the cheese is fully melted and incorporated, creating a creamy cheesy sauce. Season with salt and pepper to taste.

Arrange half of the cooked hash browns in a single layer at the bottom of the prepared baking dish.

Pour half of the cheesy sauce evenly over the hash browns in the baking dish.

Sprinkle half of the crispy bacon pieces over the sauce, followed by half of the remaining shredded cheese (50 grams).

Repeat the layers: add the remaining hash browns, then the remaining cheesy sauce, followed by the rest of the crispy bacon and the remaining 50 grams of shredded cheese. Ensure the top layer is finished with cheese and crispy bacon for a golden crust.

Bake the assembled dish in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
