Prepare the chicken marinade: In a bowl, combine the chicken, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon soy sauce, 1 tablespoon vinegar, 1 tablespoon cornflour, 1 tablespoon maida, and 1 egg. Mix well to ensure the chicken is evenly coated. Cover and marinate for at least 30 minutes in the refrigerator.

While the chicken is marinating, prepare the honey garlic sauce: In a separate small bowl, whisk together 3 tablespoons honey, 2 tablespoons soy sauce, 1 tablespoon vinegar, 1 tablespoon ketchup, 1 teaspoon chilli flakes, 1/4 teaspoon black pepper, 1 teaspoon cornflour, and 3 tablespoons water until smooth.

Prepare the garlic paste for the rice: Using a mortar and pestle, crush the 10-12 garlic cloves, curry leaves, 1 teaspoon red chilli powder, and salt to form a coarse paste. Alternatively, use a small food processor.

Fry the marinated chicken: Heat a sufficient amount of oil in a large pan or wok over medium heat. Once hot, carefully add the marinated chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes per batch. Remove the fried chicken and set aside on a plate lined with paper towels to drain excess oil.

Cook the honey garlic sauce: In a clean pan, heat 1 tablespoon of oil over medium heat. Add the 4-5 chopped garlic cloves and sauté for about 30 seconds until fragrant.

Pour the prepared honey garlic sauce mixture into the pan with the sautéed garlic. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and becomes glossy.

Add the fried chicken to the glossy sauce. Toss gently until all the chicken pieces are thoroughly coated with the sauce. Remove from heat and set aside.

Prepare the garlic rice: In a separate pan or wok, heat 2 tablespoons of oil over medium heat.

Add the prepared garlic paste to the hot oil and sauté for 2-3 minutes until it becomes fragrant and lightly golden.

Add the 2 cups of cooked rice to the pan with the garlic paste. Mix gently to combine, ensuring the rice is evenly coated with the paste.

Add 1 tablespoon of lemon juice and 2 tablespoons of chopped coriander to the rice. Increase the heat to high and toss the rice for 1-2 minutes to heat through and allow the flavors to meld.

Serve the honey garlic chicken immediately with the quick garlic rice.
