Unpack the pork shoulder flap and carefully remove any skin.

Place the skinned pork into a large mixing bowl.

Add the hoisin sauce, oyster sauce, dark soy sauce, light soy sauce, Chinese 5 spice powder, and dark brown sugar to the bowl with the pork.

Mix all the ingredients thoroughly with your hands, ensuring the pork is completely coated in the marinade.

Cover the bowl with cling wrap and marinate the pork in the refrigerator overnight (or for at least 8 hours, up to 4 days for deeper flavor).

Once marinated, preheat your air fryer to 180°C (350°F). Place the pork pieces into the air fryer basket, arranging them in a single layer if possible. If stacking is necessary, ensure there is still some airflow.

Air fry the pork at 180°C for 20 minutes.

After 20 minutes, carefully flip all the pork pieces to the other side.

Continue to air fry for another 10 minutes, or until the Char Siu is nicely charred and cooked through. The high sugar content in the marinade will help it char beautifully.

While the Char Siu is cooking, pour any extra marinade from the bowl and the drippings collected in the air fryer pan into a small saucepan.

Bring the collected marinade and drippings to a boil over medium heat, stirring occasionally, to create a thickened sauce. Reduce heat and simmer for 2-3 minutes.

Once the Char Siu is cooked, remove it from the air fryer and place it on a tray or cutting board.

Slice the Char Siu into bite-sized pieces.

Serve the sliced Char Siu over a bed of cooked rice, drizzling generously with the prepared sauce. Optionally, serve with sambal.
