Preheat your oven to 350°F. Lightly grease a 9x13 inch baking dish.

Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 8-10 minutes, or until just tender but not mushy. Drain well.

In a large bowl, combine the melted butter, cream of chicken soup, sour cream, chopped onion, 1 1/2 cups of the shredded cheddar cheese, salt, and black pepper. Mix until well combined.

Gently fold the drained potatoes into the sour cream mixture until they are evenly coated.

Pour the potato mixture into the prepared baking dish, spreading it evenly.

In a small bowl, combine the crushed corn flakes with the remaining 1/2 cup of shredded cheddar cheese. Sprinkle this mixture evenly over the top of the potatoes.

Bake for 35-40 minutes, or until the topping is golden brown and the potatoes are bubbly and heated through.

Remove from the oven and let stand for 5 minutes before serving.
