Heat the coconut oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes. The chicken does not need to be cooked through at this stage.

Pour in the Trader Joe's Thai Green Curry Simmer Sauce and the can of Trader Joe's organic coconut milk. Stir well to combine, scraping up any browned bits from the bottom of the pot.

Bring the curry to a gentle simmer. Reduce the heat to medium-low, cover, and let it simmer for 8 minutes, allowing the chicken to cook through and the flavors to meld.

Add the drained bamboo shoots, sliced water chestnuts, and frozen broccoli florets to the pot. Stir gently and continue to simmer, uncovered, for another 5 minutes, or until the broccoli is tender-crisp and heated through.

Stir in the fish sauce and fresh lime juice. Taste and adjust seasonings as needed; you might want a bit more fish sauce for saltiness or a squeeze more lime for brightness.

Serve the Thai Green Curry hot over cooked Trader Joe's jasmine rice. Garnish with fresh chopped cilantro and a lime wedge.
