Prepare the Lemon Zest Herb Mayo: In a small bowl, combine mayonnaise, fresh dill, fresh parsley, lemon zest, lemon juice, garlic powder, salt, and black pepper. Stir until well combined. Cover and refrigerate until ready to use.

Prepare the Salmon Patties: In a large bowl, combine the minced salmon, diced shallot, stone ground mustard, honey, fresh dill, salt, lemon zest, and breadcrumbs. Mix thoroughly until all ingredients are well incorporated.

Form and Chill Salmon Patties: Divide the salmon mixture into 4 equal portions and form each into a 4-ounce ball. Place the balls on a plate, cover, and refrigerate for at least 1 hour to allow them to firm up.

Prepare Garlic Butter Buns: In a small bowl, combine melted butter and garlic powder. Halve the burger buns and brush the cut sides generously with the garlic butter mixture.

Toast Buns and Cook Patties: Heat a large cast iron skillet or heavy-bottomed pan over medium-high heat. Place the buttered bun halves cut-side down in the hot pan and toast for 1-2 minutes until golden brown. Remove and set aside. Add vegetable oil and 1 tablespoon of butter to the same pan. Once the butter is melted and shimmering, place the salmon balls in the pan, leaving space between them.

Smash and Cook Patties: Place a piece of parchment paper over each salmon ball. Using a burger smasher or a sturdy spatula, firmly press down on each ball to flatten it into a patty, being careful not to smash too hard to prevent it from falling apart. Cook for 3-4 minutes until the edges are crispy and charred. Flip the patties and cook for another 2-3 minutes until cooked through and crispy.

Assemble the Burgers: Spread a generous amount of lemon zest herb mayo on the bottom half of each toasted bun. Place a cooked salmon smash patty on top of the mayo. Layer with shredded lettuce, sliced red onion, and a slice of fresh tomato. Sprinkle with a pinch of salt and crumbled feta cheese. Drizzle more lemon zest herb mayo over the toppings. Place the top bun to complete the burger.

Serve: Cut each Salmon Smash Burger in half and serve immediately.
