In a large bowl, combine the sliced peaches and hulled and quartered strawberries. Add 1/2 cup granulated sugar, 1 tablespoon cornstarch, 1 teaspoon vanilla extract, and 1/2 teaspoon cinnamon. Mix all the ingredients together thoroughly until the fruit is evenly coated.

In a separate medium bowl, add 1 1/2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/2 cup of granulated sugar. Whisk these dry ingredients together to combine them.

Add the 1/2 cup of cold unsalted butter, which has been cut into cubes, to the dry topping mixture. Use your hands or a pastry cutter to cut the butter into the flour mixture until it forms a coarse, crumbly texture.

Pour 1/2 cup of milk into the butter-flour mixture. Mix until the ingredients are just combined, being careful not to overmix.

Pour the prepared fruit mixture evenly into a 9x9 inch baking dish.

Take spoonfuls of the cobbler topping mixture and dollop them evenly over the fruit layer in the baking dish.

Preheat your oven to 375°F. Place the assembled cobbler in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit filling is bubbly.

Allow the cobbler to cool slightly before serving warm. It is optionally served with a scoop of ice cream.
