Season the 1 kg of beef camto generously with a pinch of salt and a pinch of pepper on all sides.

Heat a large pot or Dutch oven over medium-high heat. Sear the seasoned beef until it is well browned on all sides, creating a flavorful crust. Remove the beef and set aside.

To the same pot, add the whole bulb of garlic, 1 white onion (peeled and quartered), and 30g of ginger (sliced). Sauté for 3-5 minutes until fragrant.

Return the seared beef to the pot. Add 20g of leeks (roughly chopped), 10g of star anise, 5g of cloves, and 20g of cinnamon sticks.

Pour in 1 Tbsp of sugar, 1/3 cup of light soy sauce, 1/4 cup of dark soy sauce, and 1/4 cup of Shaoxing wine.

Add 1.5 Liters of Gripo stock to the pot, ensuring the beef is mostly submerged.

Stir in 2 Tbsp of 5 spice powder until well combined.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 3-4 hours, or until the beef is fork-tender. Check periodically to ensure liquid levels are adequate.

While the beef is simmering, prepare your noodles according to package directions. Boil the boychoy briefly until tender-crisp.

Once the beef is tender, remove it from the pot and slice or shred it into desired pieces. Strain the broth if you prefer a clearer soup, discarding the aromatics.

To serve, place a portion of boiled noodles in a serving bowl. Arrange the sliced beef over the noodles. Ladle the hot broth generously over the beef and noodles.

Garnish with blanched boychoy before serving hot.
