Preheat your oven to 180°C. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the diced brown onion and minced garlic and sauté for 5 minutes until fragrant and softened.

Add 500 grams of chicken mince (or pork) to the pan with the onion and garlic. Cook, breaking up the mince with a spoon, until it is browned and cooked through.

Stir in 1 tablespoon of grated ginger, 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, and 1/2 teaspoon of white pepper. Mix all ingredients well to combine.

Remove the pan from the heat. Add 1/4 cup of chopped chives and 1/4 cup of chopped coriander to the mince mixture. Mix thoroughly until evenly distributed.

Take one wonton wrapper and place a small amount of the prepared filling in the center. Bring the edges of the wrapper up around the filling and pinch them together to form a dumpling. Repeat this process with the remaining wrappers and filling, arranging the assembled dumplings neatly in a baking dish as you go.

In a separate bowl, combine 1 cup of chicken broth, 1/4 cup of soy sauce, 1 tablespoon of sesame oil, 1 tablespoon of rice wine vinegar, and 1 tablespoon of sriracha. Whisk well until all ingredients are thoroughly combined.

Pour the prepared sauce evenly over the dumplings in the baking dish. Ensure the sauce covers most of the dumplings.

Cover the baking dish tightly with aluminum foil and bake in the preheated oven at 180°C for 20 minutes.

After 20 minutes, carefully remove the foil from the baking dish. Sprinkle mozzarella cheese over the dumplings, using your desired amount.

Return the dish to the oven, uncovered, and bake for another 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden.

Remove the dumpling bake from the oven. Garnish with fresh coriander and chili flakes, if desired. Serve immediately and enjoy!
