Preheat the oven to 350°F (175°C).

Heat a large Dutch oven over medium-high heat with 1 tablespoon of cooking oil.

Pat the chuck roast completely dry with paper towels. Season generously with salt and black pepper on both sides.

Sear the chuck roast in the hot Dutch oven for 3-4 minutes per side, until well browned on all surfaces.

Add the thinly sliced yellow onion to the Dutch oven around the roast. If desired, pour in 1/2 cup of beef broth. Cover the Dutch oven with its lid.

Transfer the covered Dutch oven to the preheated oven and cook for 2 to 3 hours, or until the roast is fork-tender and shreds very easily.

Carefully remove the Dutch oven from the oven. Transfer the cooked roast to a large cutting board or bowl. Using two forks, shred the roast, discarding any large pieces of fat.

While the roast is still warm, slice the large French bread loaf down the middle horizontally.

Gently remove some of the soft bread from the top half of the loaf to create more space for the filling.

Layer the shredded roast evenly over the bottom half of the French bread. Top the roast with the slices of white American or pepper jack cheese.

Place the top half of the French bread back onto the bottom half, forming the sandwich.

Place the assembled sandwich on a baking sheet and return it to the oven for about 5 minutes, or until the bread is crusty and the cheese is melted and bubbly.

While the sandwich is warming, prepare the au jus sauce on the stovetop according to the instructions on the gravy mix packet.

Remove the sandwich from the oven. Slice it into desired portions. Serve immediately with Rotel fries and the prepared au jus for dipping. Enjoy!
