Prepare the dates for the glaze. Place the finely chopped pitted dates in a small heatproof bowl and pour 1/4 cup of hot water over them. Let them sit for 5 minutes to soften.

While the dates soften, cook the instant ramen noodles. Bring 6 cups of water to a rolling boil in a medium pot. Add the ramen noodles (discarding the seasoning packets) and cook according to package directions, usually 2-3 minutes, until tender. Drain well and set aside.
