Kiwi & Mango Sparkling Drink
Ingredients
For the Fruit Syrup
- 1 cup kiwi, diced
- 1 cup mango, diced
- 1/2 cup granulated sugar, or your favorite sweetener
- 1 cup water
For Assembly
- as needed ice, crushed is recommended
- 12 fluid ounces sparkling soda, wild berries & lime flavor or your preferred sparkling soda
For Garnish
- as needed kiwi, thin slices
- as needed mango, small diced pieces

Combine the diced kiwi, diced mango, granulated sugar, and water in a stainless steel pot.

Place the pot on a stove burner over medium-high heat and bring the mixture to a boil. Continue to boil for 5-7 minutes, stirring occasionally, until the fruit softens and the mixture thickens slightly into a syrup.

Remove the pot from the heat and allow the fruit syrup to cool completely. This will take approximately 30 minutes at room temperature, or you can refrigerate it to speed up the process.

Once the fruit syrup is cooled, fill a serving glass approximately halfway with crushed ice.

Add more crushed ice to fill the glass almost to the top.

Pour about 1/4 of the cooled kiwi and mango syrup into the ice-filled glass.

Slowly pour 3 fluid ounces of sparkling soda into the glass, filling it to the top.

Garnish the drink with a thin slice of kiwi placed on the rim or top of the ice.
