Dice the potatoes into small, even 1/2-inch cubes for quicker cooking. Set aside.

Heat a large 12-inch skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease and transfer the cooked beef to a plate, leaving any rendered fat in the skillet.

In the same skillet, add the olive oil. Add the diced potatoes and cook over medium heat, stirring occasionally, until they begin to soften and lightly brown, about 12 to 15 minutes.

Stir in the diced onion and cook until softened, about 2 to 3 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Return the cooked ground beef to the skillet. Add the Italian seasoning, paprika, salt, black pepper, and beef broth. Stir well to combine all ingredients.

Cover the skillet and cook for 5 to 7 minutes, or until the potatoes are fork-tender.

Sprinkle the shredded cheddar cheese evenly over the top of the meat and potato mixture. Cover the skillet again and cook for 3 to 5 minutes, or until the cheese is melted and bubbly.

Remove the skillet from the heat and let it rest briefly for about 5 minutes before serving. Garnish with chopped fresh parsley, if desired.
