Prepare the spicy mayonnaise: In a small bowl, combine the mayonnaise and sriracha. Mix well until smooth. Set aside.

Prepare your workstation: Have your cooked sushi rice, sliced imitation crab, avocado, and cucumber matchsticks ready and within reach. Fill a shallow dish or pie plate with warm water for dipping the rice paper wrappers.

Continue to roll the rice paper tightly from the bottom upwards, creating a compact, square or rectangular package. Ensure the seams are sealed.

Repeat for remaining sandwiches: Repeat steps 3-6 with the remaining rice paper wrappers and fillings to make 4 sushi sandwiches.

Optional Frying (for crispy texture): If desired, heat the vegetable oil in a non-stick skillet over medium heat. Once hot, carefully place the sushi sandwiches seam-side down in the pan. Fry for 2-3 minutes per side, or until golden brown and crispy. Remove and drain on a paper towel-lined plate.

Serve: Slice each California Roll Rice Paper Sushi Sandwich in half crosswise. Garnish with toasted sesame seeds and serve immediately with extra spicy mayonnaise on the side, if desired.
