Wash the 2 English cucumbers. Cut them in half lengthwise, then slice them into crescent-moon shapes. Place the sliced cucumbers into a large mixing bowl.

Take 1/2 of a red onion. Cut it in half, then thinly slice it into half-moon shapes (julienned). Add the julienned red onion to the bowl with the cucumbers.

Chop 1 cup of fresh cilantro. Add it to the bowl with the cucumbers and red onion.

In a separate small bowl, combine 1/2 cup white vinegar, 1/4 cup soy sauce, 2 teaspoons sesame oil, 2 teaspoons agave or honey, 1 tablespoon sesame seeds, and 2 teaspoons chili crisp. Season with salt and pepper to taste. Whisk all the dressing ingredients together thoroughly until well combined.

Pour the prepared dressing over the cucumber, red onion, and cilantro mixture in the large bowl. Using two large spoons, mix all the ingredients together thoroughly until everything is well coated with the dressing.
