Preheat your oven to 450°F. If using an air fryer for the hash brown, preheat it according to package directions.

Carefully separate the egg whites from the yolks. Place the egg whites into a large, clean mixing bowl and set the yolks aside in a small container or bowl.

Using an electric mixer, whip the egg whites on high speed until stiff peaks form. This means the whites will hold their shape when the beaters are lifted.

Gently fold the cottage cheese and freshly grated Parmesan cheese into the whipped egg whites. Be careful not to deflate the whites too much.

Lightly spray a baking sheet with cooking spray. Spoon the egg white mixture onto the prepared baking sheet, forming two cloud-like mounds. Create a small indentation in the center of each cloud to hold the yolk later.

Place the baking sheet into the preheated oven and bake the egg white clouds for 3 minutes.

While the cloud eggs are baking, air-fry the Trader Joe's hash brown until it is crispy and golden brown, following the package instructions.

Carefully remove the baking sheet from the oven. Gently pour one egg yolk into the indentation of each baked egg white cloud. Return the baking sheet to the oven and bake for an additional 3 minutes, or until the whites are set and the yolks are still runny.

Once baked, carefully transfer a cloud egg onto a plate, ideally on top of the crispy air-fried hash brown. Drizzle with chili oil or your preferred spicy topping before serving immediately.
