Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

While the pasta is cooking, heat the olive oil in a large pan or skillet over medium-high heat.

Add the salmon to the hot pan and pan-fry for 3 to 4 minutes on each side, or until cooked through and easily flaked.

Once cooked, remove the salmon from the pan and flake it into smaller pieces using a fork. Set aside.

In the same pan, add the finely chopped onion and garlic. Sauté for 2 minutes until softened and fragrant.

Pour in the double cream and bring to a gentle simmer.

Add the spinach to the pan, stirring until it wilts into the cream sauce.

Season the sauce with salt and pepper, then stir in the lemon juice.

Add the cooked pasta to the sauce in the pan. Toss to coat the pasta evenly.

Gently incorporate the flaked salmon into the pasta and sauce mixture. If the sauce is too thick, add a splash of the reserved pasta water.
