Melt the unsalted butter in a large skillet (preferably cast iron or non-stick) over medium heat. Once melted, add the packed light brown sugar and the salt. Stir continuously until the sugar has dissolved and formed a smooth, bubbling caramel sauce, about 2 to 3 minutes.

Carefully add the sliced bananas to the skillet in a single layer if possible. Cook for 2 to 3 minutes without stirring, allowing the bottoms to caramelize and turn golden brown. Gently flip the banana slices and cook for another 2 to 3 minutes on the other side until tender and caramelized.

Remove the skillet from the heat. Stir in the vanilla extract and ground cinnamon. The sauce will thicken slightly as it cools. Gently toss the bananas to ensure they are evenly coated in the delicious caramel sauce.

Serve the caramelized bananas immediately while warm. They are excellent on their own, or you can serve them with a scoop of vanilla bean ice cream, a dollop of whipped cream, a sprinkle of toasted chopped pecans, and a drizzle of chocolate sauce for an extra special treat.
