Place the halved baby potatoes in a bowl. Drizzle with 1 tablespoon of olive oil and season generously with the potato seasoning blend. Toss thoroughly to ensure the potatoes are evenly coated.

Transfer the seasoned potatoes to an air fryer basket, arranging them in a single layer. Air fry at 400°F for 15 minutes.

After 15 minutes, remove the basket and shake the potatoes to redistribute them. Return the basket to the air fryer and continue air frying for another 10-15 minutes, or until the potatoes are golden brown and crispy.

While the potatoes are air frying, pat the flank steak dry with paper towels. Season the steak liberally on both sides with the steak seasoning blend.

Once the skillet is hot, carefully place the seasoned steak in the skillet. Sear the steak for 3-4 minutes per side for a medium-rare doneness. Adjust cooking time for desired doneness.

Remove the steak from the skillet and let it rest on a cutting board for 5 minutes before slicing.

Using the same skillet (no need to clean it), reduce the heat to medium. Add the butter to the skillet and let it melt.

Add the minced garlic to the melting butter. Cook the garlic for approximately 30 seconds to 1 minute, until fragrant. Stir in the fresh chopped parsley.

Slice the rested steak against the grain into desired thickness. Arrange the sliced steak on a serving platter or individual plates. Pour the prepared garlic butter generously over the sliced steak. Serve alongside the crispy air-fried potatoes.
