Preheat your oven to 400°F. Prepare the garlic heads by slicing off the top 1/4 inch to expose the cloves. Place the garlic heads on a piece of aluminum foil.

Drizzle each garlic head with 1/2 tablespoon of olive oil, then sprinkle with salt and black pepper. Wrap the garlic heads tightly in the foil.

Roast the garlic in the preheated oven for 35 to 40 minutes, or until the cloves are very soft and golden brown. Remove from the oven and let cool slightly.

Once cool enough to handle, squeeze the softened garlic cloves from their skins into a small bowl. Mash the roasted garlic with a fork until it forms a paste.

In the same bowl, combine the mashed roasted garlic with the softened unsalted butter. Mix well until thoroughly combined.

Place the sliced bread halves, cut-side up, on a baking sheet. Evenly spread the roasted garlic butter mixture over the cut surfaces of the bread.

In a separate bowl, combine the shredded mozzarella cheese and grated Parmesan cheese. Sprinkle the cheese mixture generously over the buttered bread. If desired, sprinkle with red pepper flakes.

Bake in the 400°F oven for 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden brown. For extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
