Finely chop the crab meat. In a medium bowl, combine the chopped crab meat, softened cream cheese, and chopped green onions. Mix these ingredients thoroughly with a spoon until well combined and evenly distributed.

Lay out the low carb tortilla flat on a clean surface. Sprinkle half of the shredded mozzarella cheese (approximately 2 tablespoons) over one half of the tortilla.

Evenly spread the prepared crab meat mixture over the same half of the tortilla where the mozzarella was sprinkled.

Sprinkle the remaining shredded mozzarella cheese (approximately 2 tablespoons) on top of the crab mixture.

Carefully fold the tortilla in half, pressing gently along the edges to secure the filling inside.

Heat a non-stick pan or skillet over medium heat. Add the butter or oil to the pan and allow it to melt and heat up.

Once the butter or oil is hot and shimmering, carefully place the folded quesadilla into the pan. Fry for 3 to 4 minutes per side, or until it is golden brown, crispy, and the cheese is melted and bubbly.

Remove the cooked quesadilla from the pan and place it on a cutting board.

Slice the quesadilla in half or into smaller wedges, if desired.
