To prepare the sofrito, combine 1/2 large onion, 1 medium green bell pepper, 1 cup chopped cilantro (from 1-2 bunches), and 5-6 garlic cloves in a food processor. Add 1/4 cup olive oil, 1 tablespoon black pepper, and 1 teaspoon salt (optional). Blend all the sofrito ingredients until a smooth consistency is achieved.

Clean the 3-4 chicken drumsticks and thighs. Season the chicken with 2-3 teaspoons adobo, 1-2 teaspoons black pepper, and 2 packets sazon (about 2 1/2 tablespoons). Add a generous portion of the prepared sofrito to the seasoned chicken and mix thoroughly to ensure all pieces are well coated.

Place the seasoned chicken in a large pot over medium-high heat. Sear the chicken on both sides until it is nicely browned.

Add the remaining prepared sofrito to the pot with the chicken and stir to combine. Pour in 1/2 cup tomato sauce and 2-3 cups water. Add 2-3 teaspoons chicken bouillon powder and 2-3 bay leaves to the pot. Stir everything together well.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20 minutes.

After 20 minutes, add the 2 medium sliced carrots and 1 large cubed russet potato to the pot. Stir gently to incorporate the vegetables into the stew. Cover the pot again and continue to simmer for an additional 20-25 minutes, or until the potatoes are tender.

Serve the Pollo Guisado hot, typically alongside white rice.
