In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.

Heat 1/2 tablespoon of butter in a 10-inch non-stick skillet over medium-low heat until melted and shimmering. Pour 1/4 of the egg mixture into the skillet. As the edges set, gently push the cooked egg towards the center with a spatula, tilting the pan to allow uncooked egg to flow underneath.

When the omelette is mostly set but still slightly moist on top, sprinkle 1/4 of the cooked sausage and 1/4 of the shredded cheddar cheese over one half of the omelette.

Carefully fold the other half of the omelette over the filling. Cook for another 1-2 minutes, or until the cheese is melted and the omelette is heated through.

Slide the finished omelette onto a plate. Garnish with a sprinkle of fresh chives.
