Drain the liquid from one tin of butter beans. Add both tins of butter beans (one drained, one undrained) to a saucepan along with the chicken stock.

Bring the mixture to a simmer over medium heat. Stir vigorously and use the back of a spoon or a potato masher to squish about one-third of the beans. Continue to simmer and stir for approximately 10 minutes, allowing the starches from the squished beans to thicken the mixture.

Remove the saucepan from the heat. Stir in the grated Parmesan cheese, the juice from the lemon, and the Dijon mustard until well combined and creamy.
