Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.

Prepare the bread by laying out 8 thin slices. In a small bowl, whisk 1 egg for the eggwash. Brush the sides of 4 slices of bread with the eggwash.

On each of the 4 egg-washed slices of bread, place 1 to 2 slices of salted butter in the middle, depending on your desired butteriness. Top with the remaining 4 slices of bread to form 4 sandwiches.

In a medium bowl, combine 120g of unsalted butter, 100g of sugar, and 1 egg. Mix until well combined and creamy.

In a separate small bowl, dissolve 5g of instant coffee powder in 15ml of hot water. Add this coffee mixture to the butter mixture and stir well.

Add 120g of all-purpose flour, 5ml of vanilla extract (if using), and 1 pinch of salt to the coffee-butter mixture. Mix until the spread is smooth and all ingredients are fully incorporated.

Evenly spread the prepared rotiboy mixture over the top of each bread sandwich. Ensure the entire top surface is covered.

Carefully transfer the prepared rotiboy toasts to the lined baking sheet. Bake in the preheated oven for 12-15 minutes, or until the topping is golden brown and crackly.

Remove from the oven and serve warm. The center will be molten and buttery.
