Heat olive oil in a large, heavy-bottomed skillet or cast iron pan over medium-high heat. Once shimmering, add the diced sweet potatoes.

Cook the sweet potatoes, stirring occasionally, until they start to soften and brown, about 8-10 minutes. Do not overcrowd the pan; cook in batches if necessary.

Add the diced yellow onion and minced jalapeño to the skillet with the sweet potatoes. Continue to cook, stirring occasionally, for another 5-7 minutes, until the onion is translucent and the jalapeño has softened.

Stir in the minced garlic, smoked paprika, ground cumin, cayenne pepper (if using), kosher salt, and black pepper. Cook for 1 minute more, stirring constantly, until fragrant.

Reduce heat to medium-low, cover the skillet, and cook for an additional 5-7 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
