Cut the 1 lb chicken thigh into 1 inch pieces. Place the chicken pieces in a bowl.

Whisk all the sauce ingredients together until they are well combined and the cornstarch is dissolved.

Heat 1 tablespoon of oil in a clean pan or wok. Add 1 tablespoon minced ginger, 1 tablespoon minced garlic, and 1 teaspoon red chili flakes (optional) to the hot oil. Sauté the aromatics until they are fragrant.

Pour the whisked General Tso sauce mixture into the pan with the aromatics. Stir constantly until the sauce thickens to your desired consistency.

Add the double-fried chicken pieces to the thickened sauce. Toss the chicken until it is fully coated with the sauce.
