Add 1 cup of small sago pearls and 3 cups of water to the rice cooker pot.

Turn on the rice cooker to the "cook" setting. Once the rice cooker switches to the "warm" setting (or finishes cooking), let the sago sit for 10 minutes.

After 10 minutes, fluff the sago pearls with a fork. If there are still white spots in the center of the pearls, add an additional 1/4 cup of water and cook for another 5 minutes.

Drain the cooked sago pearls and rinse them thoroughly with cold water to remove excess starch and prevent them from sticking together. Set aside.

In a separate bowl, combine the 1 can (400ml) of coconut milk, 1 cup of ube halaya, 1/2 cup of condensed milk, 1/4 cup of sugar, and 1/2 teaspoon of ube extract. Whisk the ingredients together until they are well combined and the mixture is smooth.

In a small bowl, create a cornstarch slurry by dissolving 1 tablespoon of cornstarch in 1/2 cup of milk. Add the cornstarch slurry to the ube mixture and whisk until it is fully incorporated.

Pour the prepared ube mixture into the rice cooker pot. Turn on the rice cooker to the "cook" setting. Stir the mixture occasionally to prevent sticking and ensure even heating. Continue stirring until the ube mixture thickens to your desired consistency.

Once thickened, add the cooked and rinsed sago pearls to the rice cooker pot. Stir gently to combine the sago pearls with the ube mixture.

Serve the Ube Sago warm or chilled. Garnish with roasted coconut flakes and an optional pinch of salt before serving.
