Preheat your oven to 180°C (350°F).

In a mixing bowl, combine the soy sauce, maple syrup, gochujang, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper. Whisk all ingredients together until well combined to create the marinade.

Place the short ribs into a baking dish. Pour the prepared marinade evenly over the short ribs, ensuring they are well coated.

Cover the baking dish tightly with aluminum foil.

Place the covered dish in the preheated oven and slow roast for 3 hours.

After 3 hours, carefully remove the foil from the baking dish. Return the uncovered dish to the oven and continue to roast for another 30 minutes. The ribs should be fall-apart tender.

While the ribs are finishing, prepare the herby cucumber salad. In a separate bowl, combine the thinly sliced cucumber, chopped fresh dill, chopped fresh mint, thinly sliced red onion, chili flakes, olive oil, lemon juice, salt, and pepper.

Toss all the salad ingredients together gently to combine.

Serve the slow-cooked Korean short ribs hot, alongside a portion of cooked rice and the fresh herby cucumber salad.

Garnish the short ribs with sesame seeds before serving.
