Bring a large pot of water to a rolling boil. Add 200 g of pasta (such as penne) and cook according to the package directions until al dente. Before draining, reserve 200 ml of the pasta cooking water.

While the pasta is cooking, heat 1 tablespoon of olive oil in a separate large pan over medium heat. Once the oil is hot, add the 2 sliced cloves of garlic and 1 sliced red chilli. Sauté for 2-3 minutes until the aromatics are fragrant and slightly softened.

Add the 100 g of frozen peas to the pan with the aromatics. Pour in the 200 ml of reserved pasta water. Bring the mixture to a gentle simmer.

Season the pea mixture with a pinch of salt and a pinch of black pepper. Stir well to combine.

Once the pasta is cooked, drain it thoroughly and add it directly to the pan with the pea mixture. Stir everything together until the pasta is evenly coated with the sauce.

Remove the pan from the heat and stir in the chopped leaves from 1 sprig of fresh mint.

Transfer the pea pasta to individual serving bowls.

Garnish generously with freshly grated Parmesan cheese before serving.
