While the cookies are cooling, prepare the filling. In a medium bowl, combine the powdered sugar, creamy peanut butter, softened unsalted butter, milk, and vanilla extract.

Use an electric mixer to beat the filling ingredients until they are smooth and creamy.

Once the cookies have cooled completely, take one cookie and spread a generous amount of the prepared filling onto its flat side.

Place another cookie on top of the filling, flat side down, to create a sandwich.
