Wash the sushi rice thoroughly under cold running water until the water runs clear. This removes excess starch and helps achieve the desired texture.

Combine the washed sushi rice and 2 cups of water in a medium saucepan. Bring the mixture to a boil over high heat.

Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 minutes. Do not lift the lid during this time.

To assemble a sushi roll, place one sheet of nori seaweed, shiny side down, on a bamboo rolling mat. Dampen your hands slightly to prevent the rice from sticking.

Spread a thin, even layer of the seasoned sushi rice over the nori, leaving about a 1-inch gap at the top edge (the edge furthest from you).

Arrange your desired fillings (cucumber, carrot, tofu, avocado) in a line across the rice, closer to the bottom edge of the nori.

Using the bamboo mat, carefully lift the edge closest to you and begin to roll the nori and fillings tightly away from you. Apply gentle, even pressure as you roll to create a firm cylinder.

Once rolled, moisten the exposed 1-inch strip of nori at the top edge with a little water to help seal the roll. Continue rolling until the seam is secure.

Repeat steps 8-12 for the remaining nori sheets and fillings.

Using a sharp, damp knife, carefully slice each sushi roll into 6-8 individual pieces. Wipe the knife clean and dampen it between cuts for cleaner slices.

Arrange the sushi pieces on a serving platter and enjoy immediately. Serve with soy sauce, wasabi, and pickled ginger if desired.
