In a large pot, combine the uncooked elbow macaroni, 6 cups of water, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat, stirring occasionally to prevent sticking.

Once boiling, reduce heat to medium and cook for 7-9 minutes, or until the pasta is al dente. Drain the pasta well and set aside.

While the pasta is cooking, prepare the cheese sauce. In a medium saucepan, melt the 2 tablespoons of unsalted butter over medium heat.
Whisk in the 2 tablespoons of all-purpose flour and cook for 1 minute, stirring constantly, to create a roux.

Gradually whisk in the 1 1/2 cups of warm milk until smooth. Continue to cook, stirring frequently, until the sauce thickens, about 3-4 minutes.

Remove the saucepan from the heat. Stir in the 1 1/2 cups of shredded sharp cheddar cheese and 1/4 cup of grated Parmesan cheese until melted and smooth. Season with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.

Add the drained cooked macaroni to the cheese sauce and stir until evenly coated. Serve immediately.
