Preheat your grill to medium-high heat (around 400-450°F). Lightly oil the grill grates to prevent sticking.

Pat the salmon fillets dry with paper towels. Brush both sides of the salmon with olive oil and season with salt and black pepper.

In a small bowl, combine the grated Parmesan cheese, minced garlic, chopped fresh parsley, bread crumbs, and melted butter. Mix until well combined.

Carefully press the Parmesan mixture onto the top side of each salmon fillet, creating an even crust.

Place the salmon fillets, skin-side down (if applicable), on the preheated grill. Grill for 4-6 minutes, or until the skin is crispy and the salmon is easily released from the grates.

Carefully flip the salmon fillets. Grill for another 4-6 minutes, or until the internal temperature reaches 145°F and the Parmesan crust is golden brown and slightly crispy. The cooking time will vary depending on the thickness of your fillets.

Remove the salmon from the grill and let it rest for a couple of minutes before serving. This allows the juices to redistribute.
