Heat your vegetable oil in a wok or large frying pan until it's smoking hot. This is crucial for achieving crispy eggs.

Carefully pour the 2 reserved egg whites into the hot oil and fry until they are puffed and crispy around the edges. This should happen quickly.

Stir in the finely chopped green beans and cook for another 2 to 3 minutes until they are slightly tender-crisp.

Pour the prepared sauce mixture into the pan with the pork and vegetables. Continue cooking, stirring frequently, until the pork is dark, sticky, and caramelised, about 3-5 minutes.

Remove the pan from the heat and stir in the large handful of fresh Thai basil until it wilts.

Spoon the Crispy Egg Pad Kra Pao over steamed jasmine rice and top each serving with a giant crispy fried egg.

Break the runny yolk over the sticky pork and rice, then enjoy immediately!
