Wash the 1/2 pound of jalapeno peppers thoroughly. Slice them into uniform rounds, leaving the seeds and membranes intact for a touch of heat.

In a medium saucepan, combine the 1 cup granulated sugar, 1/2 cup apple cider vinegar, 1/2 teaspoon turmeric powder, and 1/2 teaspoon ground ginger. If desired, add the 1 teaspoon chili powder.

Place the saucepan over medium heat. Stir the mixture continuously until the sugar completely dissolves and the liquid comes to a gentle simmer.

Carefully add all of the sliced jalapeno peppers to the simmering syrup in the saucepan. Continue to simmer the mixture, stirring occasionally, until the jalapenos become tender and slightly translucent, and the syrup has visibly thickened. This will take approximately 15-20 minutes.

Remove the saucepan from the heat and allow the candied jalapenos to cool completely within the saucepan. This will take at least 2 hours.

Once cooled, carefully transfer the candied jalapenos and their syrup into clean, airtight jars for storage. Store the prepared cowboy candy in the refrigerator.
