In the bowl of a food processor, combine the crumbled feta cheese, softened cream cheese, 1 tablespoon of olive oil, lemon zest, orange zest, kosher salt, and freshly ground black pepper.

Process the mixture on high speed, scraping down the sides of the bowl as needed, until the feta is completely smooth and creamy. This may take 2-3 minutes. If the mixture is too thick, add another teaspoon of olive oil and continue processing.

Transfer the whipped feta to a shallow serving bowl or plate, spreading it out slightly with the back of a spoon to create a nice surface for drizzling.

Generously drizzle the honey over the whipped feta. Sprinkle with chopped fresh mint leaves, red pepper flakes (if using), and chopped pistachios (if using).
Serve immediately with toasted pita bread wedges, fresh cucumber slices, and/or your favorite crackers for dipping. Enjoy!
