Preheat your oven to 375°F. Line a baking sheet with parchment paper or a silicone baking mat.

Unroll the thawed puff pastry sheet onto the prepared baking sheet. If using a round brie, gently stretch the pastry into a rough circle large enough to enclose the brie wheel. Place the brie wheel in the center of the puff pastry.

Spread the fig jam evenly over the top of the brie cheese. If desired, sprinkle with chopped pecans and fresh rosemary.

Bring the edges of the puff pastry up and over the brie, gathering and pinching them together to completely enclose the cheese. You can leave a small opening at the top for a rustic look, or fully seal it. Trim any excess pastry if needed.

In a small bowl, whisk together the egg and water to create an egg wash. Brush the top and sides of the puff pastry-wrapped brie with the egg wash. This will give it a golden, shiny crust.

Bake for 18 to 22 minutes, or until the puff pastry is golden brown and puffed, and the brie is melted and gooey inside. You should see it slightly bubbling.

Carefully transfer the baked brie to a serving platter. Let it rest for 5-10 minutes before serving to allow the cheese to set slightly and prevent it from oozing out too quickly. If desired, drizzle with honey before serving.

Serve warm with an assortment of crackers, sliced baguette, and apple slices for dipping.
