Pat dry the chicken thighs. Season generously with salt and pepper on both sides.

Heat 1 tablespoon of oil in a pot over medium-high heat. Once hot, place the chicken thighs skin-side down and brown for 5-7 minutes until golden and crispy. Flip the chicken and brown the other side for another 3-5 minutes. Remove the chicken from the pot and set aside, leaving the rendered fat in the pot.

Add the diced onion to the pot and sauté until softened, about 3-5 minutes.

Add the minced garlic and julienned ginger to the pot. Sauté for 1-2 minutes until fragrant.

Stir in the diced red bell pepper and sauté for 1 minute.

Add the rinsed jasmine rice to the pot and stir to coat it with the aromatics and chicken fat.

Place the browned chicken thighs back into the pot, nestling them into the rice mixture.

Pour in the coconut milk and chicken stock. Add the fish sauce, brown sugar, black pepper, and salt.

Stir everything together thoroughly, ensuring the rice is submerged and the seasonings are well distributed.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and cook for 20 minutes.

Once cooked, remove the pot from the heat and let it rest, still covered, for 10 minutes. This allows the rice to steam and absorb any remaining liquid.

Remove the lid and gently fluff the rice with a fork.

Squeeze the juice from the fresh lime over the entire dish.

Garnish with freshly chopped cilantro before serving.
