Preheat your oven to 350°F (175°C). If your 8-inch cast iron skillet is not already warm from melting butter, place it in the preheating oven for 5 minutes to warm up.

In the warm 8-inch cast iron skillet, combine the melted unsalted butter, packed light brown sugar, and granulated sugar. Stir well with a spatula or wooden spoon until the sugars are fully incorporated and the mixture is smooth and caramel-colored.

Crack the large egg directly into the sugar mixture in the skillet. Add the vanilla extract. Stir vigorously until the egg is fully incorporated and the mixture is smooth and glossy.

Add the all-purpose flour, baking soda, and salt to the wet ingredients in the skillet. Stir gently at first, then mix thoroughly until a thick cookie dough forms and no dry streaks of flour remain. Be careful not to overmix.
