Preheat your oven to 325°F. Place the boneless beef chuck roast into a Dutch oven or other oven-safe pot with a tight-fitting lid.

Season the beef chuck roast generously with 1/2 pack of taco seasoning, 1 teaspoon of kosher salt, and 1/2 teaspoon of freshly cracked black pepper. Rub the seasoning evenly over all sides of the roast.

Add the onion cut into 6ths, 1/2 cup of orange juice, and 1/2 cup of beef stock to the pot with the roast.

Cover the pot with its lid and place it in the preheated oven. Cook for 3 hours and 30 minutes.

After 3 hours and 30 minutes, carefully remove the pot from the oven. Check the roast for tenderness by gently trying to pull it apart with two forks.

If the roast is not yet tender enough to easily pull apart, return it to the oven, still covered, and cook for an additional 30 minutes.

Once the roast pulls apart easily, increase the oven temperature to 425°F. Remove the lid from the pot and return it to the oven. Cook uncovered for 20 to 30 minutes, or until the edges are slightly caramelized and the liquid has reduced.

Remove the pot from the oven. Shred the beef directly in the pot using two forks, incorporating it with the remaining cooking liquid and onions.

Serve the shredded beef hot with fresh tortillas and your desired toppings such as chopped cilantro, sour cream, guacamole, salsa, and shredded cheese.
