Slice the 2 large onions thinly.

Heat a large pan over medium-low heat. Add 2 tablespoons of olive oil to the pan. Add the thinly sliced onions and cook for 20 minutes, stirring occasionally, until they are deeply caramelized and tender.

While the onions are caramelizing, peel and mince the 1 head of garlic. A helpful tip is to smash the garlic cloves with the side of a knife to make peeling easier.

Add the minced garlic to the caramelized onions in the pan and cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.

Season the onion and garlic mixture with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Stir well to combine.

In a separate pot, boil 400 grams of spaghetti according to the package directions. Before draining, reserve 1/2 cup of the starchy pasta water.

Add the cooked spaghetti directly to the pan with the caramelized onions and garlic. Pour in the reserved 1/2 cup of pasta water and sprinkle in 1/4 cup of Parmesan cheese.

Mix all the ingredients thoroughly in the pan until everything is well combined and the spaghetti is coated with the sauce. Serve immediately.
