Heat coconut oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

Add minced garlic and grated ginger to the pot. Cook for 1 minute until fragrant.

Stir in the red curry paste and cook for 2-3 minutes, stirring constantly, until aromatic.

Pour in the full-fat coconut milk and chicken broth. Add the fish sauce and brown sugar. Bring the mixture to a simmer, then reduce heat to low and let it gently simmer for 10 minutes to allow the flavors to meld.

While the sauce simmers, cook the udon noodles according to package directions. If using fresh udon, they often only need 2-3 minutes in boiling water. Drain and set aside.

Add the chicken pieces to the simmering curry sauce. Cook for 5-7 minutes, or until the chicken is cooked through.

Stir in the sliced bell pepper and baby spinach. Cook for 2-3 minutes, until the bell pepper is slightly tender-crisp and the spinach has wilted.

Remove the pot from the heat and stir in the lime juice.

Add the cooked udon noodles directly to the curry sauce and toss to coat evenly.

Serve immediately, garnished with fresh cilantro, lime wedges, and red pepper flakes, if desired.
