Combine the cubed mangoes, fresh mint leaves, 1 cup of the filtered water, and the granulated sugar in a high-speed blender. Blend until completely smooth and no lumps remain, about 1 to 2 minutes.
Pour the blended mango and mint mixture through a fine-mesh sieve into a large pitcher or bowl. Use a spoon or spatula to press against the solids to extract as much liquid as possible, discarding any remaining pulp and mint solids.
Add the remaining 2 cups of filtered water and the fresh lime juice to the strained mango liquid. Stir well to combine all ingredients.
Taste the agua fresca and adjust sweetness if desired by adding more sugar, 1 tablespoon at a time, stirring until dissolved. For a tarter drink, add a little more lime juice.
